Great warm weather LG recipe
Yesterday, I cooked a Trader Joe's chicken. I really like these chickens, because they don't have all the antibiotics in them that regular store bought chickens have. I'm not sure if they're completely organic or not, but they sure taste fresh and I don't get sick feeling when I eat them as compared to store bought chickens.
I saved the leftovers and today I made a Thai Chicken Curry Hotdish that I just love!!!
Ingrediants:
about 1/2 chicken, boned and cut into bite-sized pieces.
1 can Thai Coconut milk
1 med. onion, chopped
1/2 large eggplant, chopped into bite sized pieces
3 cloves garlic, minced
1/4 tsp. curry paste or more to taste
Brown rice or Quinoa, cooked
Saute onion, eggplant and garlic in small amount of olive oil in a 3 or 4 qt. cooking pot.
Add Thai Coconut milk
add curry paste, stir and add chopped chicken
Spoon over rice or Quinoa and add Braggs Amino Acid ( natural soy sauce) to taste.
I love this recipe! It really warms you up and is so tastey and good for you too!!!
You can even make it ahead of time!
note--if you don't have enough chicken for a complete protein, use the Quinoa, because it has lots of protein.
A friend made this recipe for a party and I remember the ingrediants. I'm sure it is published somewhere, but I have no idea where, so this is my remembered rendition. Enjoy!!!

New, or not so new Beliefs! Awsome!
I got this video from an email that I get from a DVD I ordered called The Living Matrix. This dvd introduces the energy power of Reiki and what I call belief thinking.
I don't go around calling everything Awsome, but since I've learned from just using nutrients and not the cure-all big Pharma drugs, that I can get healthier, I'm a big believer in what Bruce Lipton is saying here.

Does anyone have any Bitter Melon recipes?
Hi all,
Sorry I haven't been on the computer for awhile. Lots of reasons, but I'll try to do a better job now!
I've heard of Bitter Melon helping diabetics with their blood sugars before, but I couldn't find any in my local stores to try. I ordered some bitter melon pills off the internet and for me, when I don't consume a high fat meal, they work pretty well!
I recently stopped at a store called Meyers, which is much like Walmart stores, and I found them, so I bought my first 2, along with some Swiss Chard, cucumbers and green onions. I'm assuming they're not organic, but I'd still like to try them out.
A friend of mine, Pete DuMelle, who is studying the anchient Indian healing methods of Aurdevic (forgive my spelling), showed me a video of how these foods work together to help with blood sugar control and it was quite interesting! So, thank you Pete!
If I remember right, the Bitter Melon, Swiss Chard and green onions help reduce blood sugars and the cucumbers help them do that. There is more foods on the video diabetes list that I don't remember right now.
I also recently heard on one of Dr. Oz's tv shows, that Brown Seaweed is also good at helping keep blood sugars normal, so thank you Dr. Oz!
I guess Bitter Melon is very bitter.......so, if anyone knows some good recipes, please share them.

My awsome Eye Doctor
I have an awsome eye dr. I see every 6 months because of my diabetes, and yesterday he came into the exam room wearing bright green pants, a white shirt and lab coat and a huge green patterned tie! His wife was bringing in an Irish lunch for his staff so he dressed up for her. I told him he remeinded me of "Patch" and he and his staff were all smiles!!! He's the only Medical Doctor I don't mind going to!
Dr. King has told me that whatever I'm doing, as far as suppliments and diet, to keep doing it because my eyes are so healthy!!! Another reason I love this Doctor!!!
I do not wear glasses or have contact lenses. I have had 2 Lazor surgeries in the past on my right eye, once 19 years ago and again 8 years ago. Dr. King just told me that the surgeries are holding real well and my eyes are healthy!!!
